Coconut milk pumpkin pie!

-Unbaked 9in pie crust (I used Safeway roll-out)
-3/4 c sugar
-1/2 tsp cinnamon
-1/2 tsp salt
-1/2 tsp ginger
-1/4 tsp cloves
-1/4 tsp nutmeg
-1/4 tsp allspice
-2 large eggs
-1 15oz can pumpkin
-1/2 15oz can coconut milk

Heat oven to 425f
Beat eggs in large bowl. Stir in pumpkin, sugar, salt and spices. Gradually stir in coconut milk.
Pour into shell. Bake 15 min at 425f, then lower temperature to 350. Cover pie with foil and bake an additional 40-50 minutes or until knife inserted into the center comes out clean.

Clearly, crochet, knitting, sewing, and all my other hobbies were NOT GIRLY ENOUGH. So, I've taught myself how to can food. :D Made a completely delicious pumpkin butter, and canned it up! Of the 4 jars; 1 sealed immediately out of the water, 2 soon thereafter, and the last one just after I gave up on it. XD

Hoo! Pictures later (Elise laughed at me. :( I'm such an "LJ'd!" sort of person), assuming I don't start looking for more things to can.
